Subbing in Better-For-You Ingredients

I count my lucky stars that our little family doesn’t have any major food allergies. Even so, I’m always looking for ways to reduce our intake of dairy and gluten and simplify ingredient lists. Carnation® Almond Cooking Milk and Lactose Free Evaporated Milk are now my go-to ingredients anytime a recipe calls for milk. I throw these babies into everything. Saturday morning pancakes? Check. Homemade cookies? Duh. Overnight oats? Load ‘em up!
Speaking of overnight oats, below is a tasty recipe that you’ve gotta try (and if you are a family with food allergies, don’t forget to try out Simply Delicious Morsels by Nestlè® Toll House®!) Available at Walmart!

Banana, Peanut Butter & Chocolate Overnight Oats

1 serving (about 1 cup)

¼ cup old-fashioned oats

¼ teaspoon ground cinnamon

2 tablespoons SIMPLY DELICIOUS Semi-Sweet or Dark Chocolate Morsels by NESTLE® TOLL HOUSE®

1 teaspoon chia seed (optional)

8-oz. Mason jar with lid and ring or small, resealable container

½ cup NESTLÉ® CARNATION® Almond Cooking Milk (or substitute with equal amount Lactose-Free Evaporated Milk or regular Evaporated Milk)

¼ teaspoon vanilla extract

1 tablespoon peanut butter

2 teaspoons honey

¼ cup sliced banana

PLACE oats, cinnamon, morsels and chia seed into an 8 oz. mason jar.

COMBINE milk and vanilla extract; pour into jar on top of oat mixture.  Add peanut butter and honey to jar.

COVER with lid and screw on ring.  Refrigerate for at least 6 hours or overnight.  Oats might be very thick after refrigeration.  To loosen the texture, remove lid and ring and microwave on HIGH power for 20 seconds.  Mix well.  To eat warm, microwave a little bit more.

TOP with sliced bananas and enjoy.
