Happy Egg Co. Quiche Recipe

The last recipe I shared with Happy Egg Co. was Egg-nanas!

Today, I’m sharing a quiche recipe. My girls are still learning to love quiche as much as I do, so we keep the ingredients to the things they already love: eggs, cheese, bacon. However, I have big plans of getting spinach back in the mix again soon.

My mother gifted me a Better Homes and Gardens Cookbook when I was in college, and it’s well-worn because that is where I always go for classic recipes.

As I shared before, we’re longtime fans of Happy Egg Co. Their products range from Free Range, Organic, and now their Heritage Breed. Heritage Breed is at a higher price point, so it’s a special occasion egg purchase for my family. Here’s why I love them: They are beautiful light blue and chocolate brown shades of eggs. Also, they have yolks that are the darkest amber color. SO beautiful and rich tasting.

Heritage Breed eggs are from two breeds of Heritage hens: Copper Maran and Speckle Legbar. If you aren’t familiar with Happy Egg Co., ALL of their eggs are American Humane® Certified. The hens’ feed is a vegetarian, all-natural, hormone-free, specially formulated diet, primarily of premium corn, resulting in better-tasting, creamier eggs. They can be found in the egg section at select Walmart stores.

Quiche Recipe

adapted from Better Homes and Gardens Cookbook

Prep: 25 mins, Bake: 52 minutes, Oven: 450°/325°F,
Stand: 10 mins, Makes: 6 Servings

1 pastry crust (I used store bought)
4 beaten Happy Egg Co. eggs
1 1/2 cups milk
1/4 tsp salt
1/8 tsp black pepper
dash of nutmeg
3/4 cup chopped bacon
1 1/2 cups shredded cheese (I used Colby)
1 Tbsp all-purpose flour

Directions:
1. Line a 9-inch pie plate with pastry crust. Trim; crimp edges as desired. Line unpricked pastry with a double thickness of foil. Bake in a 450° oven for 8 minutes. Remove foil. Bake for 4-5 minutes more or until pastry is set and dry. Remove from oven. Reduce oven temperature to 325°.
2. Meanwhile, in medium bowl stir together eggs, milk, salt, pepper, and nutmeg. Stir in bacon. In a small bowl, toss the cheese and flour together. Add to egg mixture; mix well.
3. Pour egg mixture into hot, baked pastry shell in the pie plate. Bake at 325 in the oven for 40-45 minutes. Or until knife inserted near center comes out clean.

After letting it stand for 10 minutes, serve and enjoy an easy breakfast (or dinner!) I like to add a side of tomatoes or avocado.
