Hey lovelies! If you follow our little ‘ole blog you probably read Bethany’s post about this cookbook that we both are LOVING, if not I’ll remind ya!

Cooking That Counts, by the editors of Cooking Light works by providing meal plans that add up to 1200 – 1500 calories per day. I’ve never been diligent enough to count calories so this cookbook is SO helpful! I also like that I don’t have to pick and choose among the recipes – they are all healthy. In a world of cooking blogs and pinterest, it’s so nice to have a large collection of healthy recipes in one spot. Just like Bethany, I too pulled out the post-it notes to tag the recipes I want to try.

First up ~ a breakfast dish that will definitely make an appearance on those ‘breakfast for dinner’ nights too!

My kids would eat pancakes for every meal If I let them. I’ll be honest, so would I because, well – carbs. What has traditionally been a weekend only breakfast treat at our house, is now acceptable to have multiple times a week. While flipping through this cookbook, my eyes rested on ‘3 ingredient pancakes’. What?!? Only three ingredients, I’m in!

A banana, egg, and wheat flour – that’s it folks. AND THEY ARE DELICIOUS! My super picky boys even like them so I consider that a huge win. I don’t have to sell you on the magic of pancakes. One word : toppings! For myself, I went with berries. ricotta cheese, and honey. The boys will probably stick with just honey which is fine by me.
