A few weeks ago, I set a goal for myself to eat at least five servings of fruits and vegetables each day. I don’t even know what the recommendation is, but I just know that I was struggling to intentionally feed myself more of those nutrient dense foods each day. I’m trying to make it simple- I can’t keep up with complicated. One of the ways I’m accomplishing this goal is by adding a simple, sizable side salad to most of my meals. It’s basically chopped romaine topped with whatever vegetables we have on hand: bell peppers, avocado, tomatoes, cucumbers, carrots, etc. The key to a delicious salad? A just-as-delicious dressing.
