Breakfast Recipe: Egg-nanas

Hi friends! Popping on to share my family’s favorite breakfast recipe, in celebration of Happy Egg Co. launching their Free Range Blue and Brown Heritage Breed in select Walmart stores. Heritage Breed eggs are beautiful shades of blue and brown, that come from two breeds of Heritage hens: Copper Maran and Speckle Legbar. If you aren’t familiar with Happy Egg Co., ALL of their eggs are American Humane® Certified. The hens’ feed is a vegetarian, all-natural, hormone-free, specially formulated diet, primarily of premium corn, resulting in better-tasting, creamier eggs. How great is that?! 

We usually buy the Happy Egg Co. Free Range or Organic variety, but I was so excited to get the Heritage Breed eggs. My girls LOVE the colors and get so excited to cook and eat their eggs.

During the first time I did a strict month of eating Paleo, my friend Jessica told me about this simple, healthy breakfast. We never looked back. It’s that good!

Egg-nanas 

Ingredients: 

  • 2 Happy Egg Co. eggs
  • 1 banana
  • ¼ tsp vanilla 
  • Various toppings

Directions:

Whisk the eggs together in a bowl, notice the golden amber color of Heritage Breed yolks- it’s beautiful! In a separate bowl, mash the banana. Combine into one bowl, add the vanilla. We use clear, Mexican Vanilla for a delicious cinnamon flavor. Spray a 10” skillet with 100% olive oil or avocado oil. Pour in mixture and scramble it over medium heat. When cooked through, serve it on a plate, topped with anything you’d like. My favorite toppings are: almond butter, strawberries, blueberries, pecans, and chia seeds. It’s delicious! Enjoy!
